First off, this recipe can be used to roast any type of vegetable, potatoes, parsnips, etc. I just had these on hand. Preheat your oven to 400 degrees F. Slice your veggies into even pieces, whatever size you’d like as long they are all about the same size. Lightly coat them in olive oil, so they’re fully covered, but not soaked. Then season with as much salt and pepper as you like (about a tsp of salt and 1/2 tsp of pepper should be the minimum). Then bake in the oven for 20 minutes and you’ve got some delicious roast veggies!
